A warm welcome to Holt and The Feathers Hotel which takes pride of place in the town centre. Holt is an elegant Georgian town, situated only 3 miles from the glorious North Norfolk coast and is renowned for its charming shops, antiques and art galleries. Holt's location also makes it an ideal base for exploring the spectacular coastline and the nearby heathland is a haven for birdwatching.
Felbrigg Hall, the Blickling Estate, Holkham Hall and the Sandringham Estate are all within a short distance and we are only 21 miles from the fine city of Norwich. The Feathers Hotel has been an important part of Holt since it was established on the site of the old cattle market in 1650. During the 19th century the 'Regulator' coach used to depart from the Hotel three times a week for the fourteen hour journey to London.
Around that time, the first Landlord, Mr Cubitt Cooke, was visited by an author named Peter Bull.

Add the breadcrumbs to the chorizo mixture, add a pinch of thyme and stir to make sure all flavours are mixed together well.
Spread the Dijon mustard onto the lamb (this will allow the chorizo crumb mixture to stick to the lamb).
Apply the chorizo crumb to the lamb and firmly press down to make sure all surfaces of the lamb are covered.
Roast in a preheated oven at 180 for 18-20 minutes (this will ensure a wonderfully pink center, cook for longer if you prefer) with crumb side up.
